- Pre-heat oven to 400 degrees
To make Mornay (cheese sauce)
- Melt 2 TBS butter in small saucepan over medium low heat, add flour and stir to combine. Cook flour for 2 minutes stirring consistently with whisk. Add milk and whisk until the sauce has thickened. Remove from heat and add Parmesan, gruyere, dash of nutmeg and ½ cup sauerkraut (with brine), mix well and season with salt and pepper
To build sandwiches
- Spread 4 slices of bread with the remaining 1 TBS butter and place butter side down on parchment lined cooking tray. Top bread with 1 slice Swiss cheese, 2-3 slices of ham and ¼ cup drained sauerkraut. Top with another piece of bread that has been brushed with Dijon mustard (mustard side down towards sauerkraut)
- Slather tops of sandwiches with cheese sauce and sprinkle evenly with Gruyere
- Bake sandwiches for 5-7 minutes until cheese is melted, turn on broiler and broil 3-5 minutes or until topping is bubbly and lightly browned.
To make Madame
- While sandwiches are in oven, cook eggs sunny side up (preheat non-stick pan over medium high heat, spray with cooking spray and crack eggs, cook until whites are set, and yolk is still runny)
- Top sandwich with one egg, season with salt and pepper and serve immediately
